Murungai Keerai Poriyal / Drumstick leaves Stir Fry

Drumstick leaves are so rich in iron and calcium that it is very healthy to have it often. It also tastes good too. This is my mum's favorite and since we have a drumstick tree in our house, this is made very often. Removing the leaves from the stalk is quite a tiresome job but to make it easy, roll the drumstick leaves in a newspaper and leave it in the fridge overnight. You will find that the leaves shed by themselves and beyond that it is easy to clean.

MURUNGAI KEERAI PORIYAL
Preparation time 10 mins | Cooking time 20 mins | Serves 2

Ingredients
  • Drumstick leaves - 1 cup
  • Onion - 1 medium
  • Garlic - 10 to 12 (optional)
  • Red chilli - 2
  • Oil - 1 tbsp
  • Mustard seeds - 1 tsp
  • Urad dal - 1/4 tsp
  • Hing - a pinch
  • Salt - to taste

Method
1. Remove the drumstick leaves from the stalk and wash it.
2. Chop the onion and garlic.
3. In a pan, add oil. Once the oil heats up, add the mustard seeds and urad dal.


4. After the mustard seeds splutter, add the onions and garlic and saute till the onions become translucent.



5. Add the drumstick leaves and keep stirring.
6. Cook on low flame until the leaves are cooked by stirring often and sprinkling some water.

Goes well with rice.

Notes
1. Sometimes we skip the onions and make it plain too. The onions give a nice crunch.
2. You can add some masala too like cumin powder and coriander powder, if you prefer.
